MATTEO FLORIO
General Manager
Born in Norwalk, Connecticut, Matteo Florio spent much of his childhood in the small Italian town of Castelnuovo della Daunia in the province of Foggia. With more than 30 years of experience in the restaurant and hospitality industry, he has worked his way from the kitchen into executive leadership, building high-performing teams and delivering exceptional guest experiences along the way.
Matteo joined FMK Hospitality Group eight months ago as a Floor Manager at Bella Vita Italian Steakhouse, later moving to The Chop House at Lake Sumter before stepping into his new role at Sawgrass Tavern & Grove.
What Matteo enjoys most about FMK is leading great teams while serving a community that truly values hospitality. He loves creating memorable experiences for guests and building lasting relationships with both visitors and team members.
One thing people may not expect about Matteo is that he believes in embracing reinvention. His philosophy is simple: growth never stops, no matter your age.

Culinary Manager
Hailing from Palatka, Florida, Michael Sebulski brings more than 15 years of culinary experience and a true passion for his craft to FMK Hospitality Group. Over the past six years, he’s played an important role in several FMK kitchens, including Belle Glade, Evans Prairie, Chop House, Tap House, and Bonifay, Bella Vita Italian Steakhouse before joining the team at Sawgrass Tavern as Culinary Manager.
Michael is known for his strong leadership, creative approach to food, and dedication to excellence in every dish he creates. He thrives on the camaraderie within FMK Hospitality Group, where teamwork and shared passion inspire him to continually grow, innovate, and collaborate with talented professionals across the company.
